Growing a SCOBY in kombucha.

"SCOBY is and abreviation of Symbiotic Culture of Bacteria and Yeast. It is the biofilm that grows on top of a kombucha tea brew. Or kimchi, sauerkraut and kefir(?) ferments.

In kombucha brewing a high tannic sugary tea is fermented to make a lightly carbonated soured drink. The SCOBY which forms on top of the fermenting tea can be reused to brew more kombucha or it can be repurposed to make beautiful durable and sustainable materials."

"A SCOBY is sometimes referred to as a mother of kombucha. Much like the mother of vinigar it comprises of cellulose & acetic acid bacteria (AAB). But differs from Mother of Vinigar by the addition of lactic acid bacteria (LAB), and yeast."
